Abstract
By this invention, low calorie fat compositions comprising the use of wax esters are provided. Of particular interest is the use of wax ester compositions having a long chain hydrocarbon and a medium chain hydrocarbon. Preferably, the long chain hydrocarbon group is a saturated long chain hydrocarbon. The wax ester compositions find use as low calorie fat ingredients in food compositions. The low calorie fat compositions of the present invention demonstrate a caloric value of less than 6 kcal/g. Such low calorie fat compositions find use in the preparation of food compositions wherein at least a portion of the fat ingredients have been replaced with a wax ester composition of the present invention.
