Provided are a manufacturing method for an electrode material and an electric storage device with the electrode material improving its output performance by making a carbon material carry a metal compound which is an unstable crystal through a high-temperature reaction and by conjugating the a composite material under an atmosphere containing oxygen. A precursor of the metal compound is carried on the carbon material while the carbon material is nanoparticulated. The precursor of the metal compound is MβYγ before containing lithium. The precursor of the metal compound is reacted to produce the metal compound. In this conjugating step, the precursor of the metal compound carried on the carbon material is synthesized and crystallized. As the method of synthesizing and crystallizing the precursor of the metal compound, a hydrothermal synthesis method for synthesizing a compound and growing its crystal is used, which is performed in the presence of high-pressure water vapor.
