A polyhedral knife that in side profile resembles a gull wing is configured for being securely retained in a clamping assembly defined by a clamp and a holder, wherein the knife is retained between the clamp and the holder. The knife has a central portion between opposite wing portions. The knife is rectangular in shape and has a central, upwardly extending semi-circular upper ridge that extends across the knife on the upper surface and the upper ridge defines a locator that is retained in a cooperatively shaped groove in the clamp. The lower surface of the knife is defined by a central locator ridge and concave surfaces on opposite sides of the locator. The clamp and the holder have cooperatively shaped, angled and radiused surfaces to mate with facing surfaces of the knife.
