Abstract
Compositions and methods related to lecithin obtained from soybeans with high oleic content are described. The high oleic content lecithin imparts improved characteristics to a product when compared to a lecithin obtained from common soybeans. Examples of improved features may include one or more of increased effective demoulding, increased oxidative stability, increased OSI induction time, increased shelf life, increased smoke point and reduced increase of viscosity induced by oxidation or heat.
