Abstract

Compositions and methods related to lecithin obtained from soybeans with high oleic content are described. The high oleic content lecithin imparts improved characteristics to a product when compared to a lecithin obtained from common soybeans. Examples of improved features may include one or more of increased effective demoulding, increased oxidative stability, increased OSI induction time, increased shelf life, increased smoke point and reduced increase of viscosity induced by oxidation or heat. Claim 1: A method for improving the characteristics of a product; The method comprises combining an oil selected from the group consisting of: mineral oil, soybean oil with high oleic content, sunflower oil with medium oleic content, sunflower oil with high oleic content, canola oil with low linolenic content, canola oil with high oleic content, safflower oil with high oleic content, palm oil, palm olein oil, olive oil, soybean oil with high oleic content partially hydrogenated, soybean oil with high content Fully hydrogenated oleic, sunflower oil with a partially hydrogenated oleic content, sunflower oil with a partially hydrogenated oleic content, sunflower oil with a completely hydrogenated oleic content, sunflower oil with a completely hydrogenated oleic content, canola oil with high content low linogenic content partially hydrogenated, canola oil with low content Fully hydrogenated linolenic acid, partially hydrogenated high oleic canola oil, fully hydrogenated high oleic canola oil, partially hydrogenated high oleic safflower oil, fully hydrogenated high oleic safflower oil, partially hydrogenated palm oil , fully hydrogenated palm oil, partially hydrogenated palm olein oil, fully hydrogenated palm olein oil, partially hydrogenated olive oil, fully hydrogenated olive oil, hydrogenated soy bean oil, hydrogenated canola oil, corn oil Hydrogenated, hydrogenated safflower oil, hydrogenated peanut oil, hydrogenated rice bran oil, hydrogenated cotton oil and hydrogenated sunflower oil, with a high oleic soy bean seed lecithin in an amount effective to improve at least a feature of the product, characteristic that is selected from the group consisting of effective demoulding, OSI induction time, increased shelf life, increased smoke point, decreased viscosity and a combination of these, compared to a control product .
