Abstract
Allulose crystals are produced efficiently from an allulose syrup using seed crystals. Claim 1: A method for producing allulose crystals, wherein the method comprises: a) cooling and stirring a first mixture comprising a first portion of allulose syrup and allulose seed crystals and initiating crystallization of dissolved allulose in the syrup of Allulose, thus forming a first cooked dough comprising allulose crystals and a first mother liquor containing residual dissolved allulose, cooling and stirring continue until a first pre-selected objective performance of the allulose crystals is achieved; b) optionally, separating the first cooked dough into a first portion and a second portion; c) optionally, combining a second portion of allulose syrup with the second portion of the first cooked dough to form a second mixture; and d) optionally, cooling and stirring the second mixture and initiating crystallization of dissolved allulose in the second portion of allulose syrup, thus forming a second cooked dough comprising allulose crystals and a second mother liquor containing residual dissolved alulose, cooling and stirring is continued until a second preselected objective performance of the allulose crystals is achieved.
