Abstract
The invention belongs to the field of nutrition and relates to a compressed solid milk tablet, a preparation method thereof and a modular system for implementing the method. The method for preparing the compressed solid milk tablet comprises the following steps: (a) compressing milk powder to obtain compressed solid milk units having a mechanical strength of 10-300 kPa, (b) humidifying the compressed solid milk units in a humidifying chamber by exposing the units to humid air having a relative humidity of more than 95% and a temperature of 60-90 ℃, wherein the humid air comprises condensed water vapour, and (c) drying the humidified and compressed solid milk units to obtain compressed solid milk tablets. The tablets obtained by this process have a mechanical strength of 20kPa to 1000kPa, a core/shell structure and a friability of less than 5%, wherein the shell comprises or consists of milk particles which are solidified and fused in planes parallel and perpendicular with respect to the tablet surface.
