THE INVENTION REFERS TO A COLORING COMPOSITION BASED ON ANTOCIANIN USEFUL AS A FOOD COLORANT, WHICH INCLUDES FROM 50% TO 90% MOLAR, BASED ON THE TOTAL AMOUNT OF ANTOCIANINS, OF ANTOCIANINS BASED ON PELARGONIDIN, IN WHICH (i)> 70% MOLAR OF ALL ANTOCIANINS ARE ACCURATE WITH AT LEAST ONE PHENOLIC ACID; AND (ii)> 20% MOLAR OF ALL ANTOCIANINS ARE ACCYLATED WITH AT LEAST ONE HYDROXYCINAMIC ACID. THE COLORING COMPOSITION OF THE INVENTION HAS A RED COLOR WITH A TONE VALUE H IN THE L * C * h COLOR SYSTEM IN THE INTERVAL OF 10 TO 30, MEASURED AT A L * VALUE OF (70.0 ± 0.1) IN A DIHYDRATED TRISODIUM CITRATE BUFFER 0.1 MOL / L pH 3 IN A QUARTZ CELL WITH A LENGTH OF 1 cm USING A SPECTRAFLASH 650 (DATACOLOR) IN TRANSMISSION MODE WITH THE ILUMINATE D65 10 DEG.
