FIELD: chemistry.SUBSTANCE: invention relates to thermally inhibited polysaccharides and methods for production thereof. The method includes dehydrating a polysaccharide in the presence of a gas to a substantially anhydrous or anhydrous condition at high pressure and high effective concentration of oxygen in the gas. The high effective concentration of oxygen is at least 6.5 mol/m. The substantially anhydrous or anhydrous condition is water content lower than 5 vol.%. The high pressure is pressure higher than atmospheric pressure. Thermal inhibition of the substantially anhydrous or anhydrous polysaccharide is then carried out. The polysaccharide is starch, a starch-containing product or a starch derivative.EFFECT: invention enables to use the obtained thermally inhibited starch instead of chemically modified or cross-linked polysaccharides in food products, obtain a composition with improved organoleptic properties, such as colour, taste and ordour; the obtained thermally inhibited starch exhibits stability of viscosity in products for all processing temperature conditions.15 cl, 1 dwg, 1 ex
